The scent of freshly baked cookies, the aroma of hot chocolate made as it was in the past, with a sprinkling of cinnamon that makes it even more delicious. Grandma also prepared apple pie for our Christmas snacks: as if there wasn’t enough food to eat during the festive season!

December, with its festivities and celebrations, has always been one of the periods we love most. This is when the Cavazza family gets together. There are those who cook, others who watch TV, children who play together and then, of course, there is always someone who chooses the wine we will drink.

The menu changes every year, as do the wines that are paired with the food, however, there are always two certainties:  the first is an aperitif with Solo per Noi! Bianco Frizzante sui lieviti – Cavazza, (semi-sparkling white wine “sur lie”), a blend of Durello (80%) and Garganega (20%), which grow on the volcanic hills in the Gambellara area; the second fermentation taking place naturally in bottles in spring. This wine features all the characteristics of its vines and terroir, in which natural bottle fermentation on local yeasts makes it intentionally opalescent because it is not filtered.  It is particularly suited for fish dishes, even raw fish ones.
