Cream of carrot with squid

Cream

Ingredients (serves 4)

200 grams of carrots

100 grams of milk

200 grams of water

salt

pepper

sugar

½ an onion

extra virgin olive oil

 Preparation

Fry the onion in the oil, adding the sliced carrots and water and bring to a boil. Whisk together the salt, pepper, and milk, until it becomes a smooth cream.

Cook the squid (covered) at 59° (Celsius) for six hours.  Then sauté the fish in EVOO until golden brown.

To finish, add powdered liquorice or grated liquorice candy.
