Salad of castraure (artichokes)

Ingredients (serves 4)

500 grams of marinated anchovies

30 grams of toasted pine nuts

30 grams of raisins softened in water

crushed tomatoes

150 grams of bufala mozzarella, cubed

fresh cut chives

salt

pepper

extra virgin olive oil

lemon juice

500 grams of castraure (artichokes)

Preparation

Clean the artichokes, and slice into thin pieces. Season with salt, pepper, EVOO and lemon juice. Add the rest of the ingredients, mix and serve.
