From first courses to desserts: a Cavazza autumn toast

Seasons change, different things are cooked, but also the wines paired with our food vary. Here are a few ideas for some good autumn pairings.

Sustainability and respect for nature have always been among our company’s intrinsic values, not only in the vineyards or cellar, but also in daily life. This is evident in how we respect seasonal produce that nature gives us, allowing us to benefit from all the nutrients that are required to help us live well in the different seasons of the year: fruit and vegetables allow us to interpret every season in many ways and to express them with appropriate wine pairings. So, what will we include in our autumn shopping list? Pumpkin, mushrooms, fennel, radicchio, pomegranate, pears, apples, chestnuts, mandarins and countless more.
As autumn approaches and temperatures start to fall, our cuisine becomes a warmer, heartier and more flavorful. We must pamper ourselves to positively face the new season with an open heart.

Three proposals to savour autumn with us

We wish to start off with a traditional first course: risotto di zucca violina di Melara (Melara butternut squash) paired with our Garganega Veneto IGT 2020 Cavazza. The Melara butternut squash is a Veneto region variety grown mainly in the Po Delta and upper Polesine, where superior quality Veneto PGI Canaroli rice is grown. In this case we would pair similar food and wine flavours: the residual sugar of the wine matches the sweetness of the pumpkin, creating a pleasant, well-balanced mouthfeel.

While if you prefer second course dishes, we would suggest the classic and delicious Baccalà alla Vicentina (Vicenza-style Cod): a soul-pampering delicacy, which we at Cavazza match with real pleasure with Tai Rosso Colli Berici Doc Cavazza  ̶  a traditional pairing, also proposed by the Confraternita del Baccalà (Association Promoting Cod).

Do you love desserts? We have an idea for you too, which is rooted in our childhood. When we were children, we would help our grandfather at harvest time while our grandmother was in the kitchen preparing an afternoon snack with Garganega grape sweet focaccia. We discovered the perfect accompaniment only when we became adults: Soelio Recioto di Gambellara Spumante Docg Cavazza. A creamy, warm sparkling wine that pairs well with the sweetness of the dish without making it too cloying.
